X: Rebirth, while not the steaming pile it was at launch, is a very different game; more a spaceship shooter with trading and empire building.
Elite is technically an MMO, there are other people playing it, but it does have a solo mode. The combat in it is far more visceral than any of the others. The trading mechanics are more like EVE's than the others. I liked Starpoint Gemini 2, though I found it got boring in fairly short order. Personally, I feel it's the most arcade-y of all of them.

EvE is more a "second life" in space than a classic game, almost everything requires players to work or even exist like the market, the mission and PvE parts are minimalistic.
EvE would be an empty shell without real people. This is unlike games like Elite:Dangerous with no real economy simulation, where NPCs can substitute players. I'm my own NPC alt.
